While this is resting, take the dough out of the fridge, and divide it into 2 unequal parts. The larger part we make a sheet so as to cover a form of tart previously greased with butter, we put the composition and on top we spread a sheet enough to cover the pie. Grease with well beaten egg and put it in the oven until it browns on the edges.

  • 125 g sugar
  • 50 g butter + 50 g oil for spreading sheets

Ingredient:

  • 3 eggs
  • 8 tablespoons wheat flour
  • 8 tablespoons kefir
  • 3 tablespoons oil
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder

Ingredients for the filling:

  • 300 g minced meat
  • 1 onion
  • 3 cloves of garlic
  • 1 zucchini
  • 150 g of cheese
  • 1/2 teaspoon salt
  • SPICES
  • sesame, sunflower seeds

Method of preparation:

1. Using a knife, cut the zucchini into small cubes. We put them in a bowl. Separately mix the minced meat with finely chopped onion, crushed garlic, salt, spices and mix well.

2. In a separate bowl, prepare the dough. Beat the eggs with a mixer. Add salt, kefir, oil, flour, baking powder and mix well until smooth.

3. Pour half the amount of dough into a baking tray lined with oil. On top, add the minced meat and cover with the previously prepared zucchini. Add the grated cheese.

4. Add the remaining dough and finally decorate with sunflower seeds and sesame.

5. Bake at 180 degrees for 60 minutes, until nicely browned.

Dobrogean pie with salted cheese

Of all the savory pies I make, this one Dobrogean pie with salted cheese I especially like it.

I like it because it reminds me of the old days when I used to go to pastry shops especially for such a pie. But, most of all, I liked serving it in the holiday village of Mamaia. It seemed the tastiest there.

I tried to reproduce that taste with a childhood flavor and I think I mostly succeeded.

It is important to use your favorite cheeses for this pie. And the pie sheets should be well greased with butter.


(Out of these quantities come 8 pieces):

1. Make a dough from salt water and flour.

Knead it (about 10 minutes) until it detaches from the bowl and becomes elastic, which means that if you press with one finger it returns to its original shape. (Some pressed with all their palms :))

2. Let it rest for 30 minutes.

3. Divide it into 2 pieces. We take a piece and spread it on the board sprinkled with flour until we get a rectangular sheet 0.3 cm thick (I did not measure but it was written in the recipe).

4. Cut it into 4 strips and put the grated cheese on each and mix it with a little salt. If you want you can also put a few finely chopped green onion tails.

5. Grasp the dough on both sides by pressing lightly (see photo) so that the cheese is not visible and roll in a spiral shape.

6. Spread the spiral lightly with the rolling pin, helping us with a little flour. The result is a thin pie with a diameter of 20-22 cm (and I'm writing to you that I didn't measure, but maybe the size will help you get an idea of ​​how thin the pie should be).

7. Fry in a little hot oil until they brown nicely on one side and on the other then take them out on an absorbent paper.

Do the same with the other half of the dough.

They are very good both hot and cold. (There is no point in writing that we ate them hot because we could not wait to cool down).
