Then add the 2 tablespoons of flour, mix and leave to rise for 15 minutes.

In a large bowl put sifted flour, eggs, sugar and mayonnaise.

We start to knead by gradually adding the milk mixed with water.

We get a homogeneous dough.

Then add the oil and knead well for 10-15 minutes, until the oil is incorporated into the dough.

Then let the dough rise in a warm place for 1-2 hours or until it doubles in volume.

When the dough has risen, take it out on the floured table and knead a little more so that the air comes out of it.

After it has risen, divide the dough into 2 pieces, one of which we spread in a round sheet.

Divide the other part of the dough into 3, spread each piece in a thin string, place the pieces next to each other and knit them.

In a round tray lined with baking paper we put the sheet of dough, and on the edge we put the braid.

Put the cheese in the middle and let the easter rise for another 20-30 minutes.

Grease it with beaten egg and put it in the preheated oven until it browns nicely on top.

When we take it out of the oven, grease it with sugar water and let it cool.

How do you prepare it? First, the raisins are hydrated in a rum essence mixed with a little water, after which a yeast mayonnaise, a tablespoon of flour and 100 ml of warm milk are prepared. After mixing well, leave to rise until it doubles in volume. The next step is to separate 7 eggs from egg whites and yolks, and the latter are rubbed with a pinch of salt until you get a light foam.

Put the remaining milk to boil, along with the sugar, until it starts to boil, then leave it to cool. When the composition has cooled enough, add a rum essence, egg yolk foam and grated lemon peel.

Preparation Easter with sweet cheese

We mix the sweet cow's cheese with the caster sugar, rum essence, vanilla sugar, raisins, whole eggs and lemon peel, until smooth.

Then add the semolina and flour and mix again until smooth.
In a bowl put flour, make a hole in the middle and add yeast, caster sugar, vanilla sugar, grated lemon peel, egg yolks, melted butter, warm water, warm milk and a pinch of salt, then knead the dough. , for 30 minutes, until a non-stick dough is obtained. Then cover the dough with a towel and leave in a warm place for about 1 hour to leaven.

When the dough is leavened, it must be turned over on the work surface sprinkled with flour and divided into 2 approximately equal parts.
From the first half of the dough, a round sheet is made by hand as a tray that we use for Easter.

You can use a round cake tray with detachable walls, with a diameter of about 25 cm, lined with baking paper. Put the sheet in the tray the round sheet and prick it from place to place with a fork.

In a tall bowl, sift the wheat flour, and in the middle we add the mayonnaise. Dissolve the remaining sugar in 75 ml of milk and put it in the flour bowl. Then add salt, lemon peel, eggs, butter and oil. Mix well, knead the dough and then leave it to rise, in a warm place, for about an hour.

Meanwhile, beat the egg whites with the sugar until a hard, glossy foam forms. Then mix the yolks with the cottage cheese, add the raisins, vanilla sugar, and finally add the egg whites.

After the dough has doubled in volume, it is transferred to the worktop, then divided into two equal parts. One part of the dough will be rolled into 3 and a roll will be formed, and the other piece will be shaped into a basket.

We put the dough in the shape of a basket in a tray greased with butter and lined with baking paper. We add the cheese filling, and on top we put the braided roll.
