Summer cooking is all about flavorful and easy-to-make food — and when it comes to dessert, there’s no better choice than pie. Whether you’re filling a flaky, buttery crust with layers of tart lemon curd and sweet, fluffy meringue or making a rich and creamy chocolate pie in a graham cracker crust, the flavors of summer really come through in freshly baked pie. Though pie sometimes has a reputation for being difficult to make, there are lots of seasonal pie recipes that are easy to whip up, making them perfect for any picnic, party, or cookout.

One of the keys to making great summertime pie is to use seasonal ingredients or flavors. There are lots of fresh fruits available during the warmer months. Try making pie with cherries, peaches, berries, or tart Key limes. Not all summer pies are fruit-based, though; the simple combination of a crushed graham cracker crust, a chocolate ganache or pudding filling, and a toasted marshmallow topping makes a delicious (and summer-appropriate) s’mores pie — no campfire needed.

Once you’ve settled on the flavors for your summer pies, make baking easier with a few tricks. Try using a store-bought pie crust (rather than making your own) or stick to pies that use graham crackers (or another crushed cookie or cracker) as the base of a quick, no-bake crust. As a general rule, you can combine 1 ½ cups of crushed graham crackers, wafer cookies, crackers, or pretzels with ¼ cup of sugar and ⅓ cup of melted butter for a quick crust. Just mix the ingredients until they resemble damp sand and then press the mixture into the bottom of a pie plate. Refrigerate the crust for 30 minutes before filling it.
