Roast the chicken, wash it, put the butter under the skin and massage it. Place on a special oven rack. Grease the skin with oil, wine and then rub with spices.

Add the new peeled potatoes to the pan, wash and cut into cubes, washed and chopped carrots and mushrooms, then the green garlic leaves, cherry tomatoes and a few kalamata olives. Sprinkle the spices on them as well.

Add oil and water to the pan, then place in the preheated oven for about 1 hour and a half over medium heat.
