I woke up in the middle of July that I want strawberries & # 8230 when the markets were full I didn't need them or I took them and forgot about them in the fridge.

For the strawberry mousse I needed: 200 g of strawberries (or a glass), 2 eggs (egg whites, actually), 200 g of sugar, fresh mint leaves and whipped cream (optional, if garnished with whipped cream).

Beat the egg whites, then add the sugar and beat the composition again until it hardens so that it does not fall off the target.

We crush the strawberries with a fork, then we turn them over the foam, mixing them all with the whisk (if we use the mixer the foam spoils and turns into a juice & # 8230eu I suffered it & # 8230)

Pour the foam into glasses, cups or whatever we want and put in the freezer.

In the meantime, we prepare the whipped cream from the cream (we mix the cream with sugar or without it hardens) or if we have it ready made / bought even better & # 8230 we just have to wait for the foam to cool.

Before serving, garnish with strawberry slices, fresh mint leaves and whipped cream.


  • Let everything boil for about 20-25 minutes. During this time, stir from time to time so that it does not stick.

  • Meanwhile, beat the egg whites with the salt powder and then gradually add the powdered sugar until we finish it.
  • Add the hot sauce in a thin line, so the egg whites will not be raw.
  • Mix for about a minute and a half, until you get a firm foam.
