  • 1 vial of vanilla essence, 5 cups Greek yogurt
  • 1 cup and a half of sugar, squeezed juice from two oranges
  • 3 eggs, 1 sachet of gelatin, 1 cup of olive oil

In a bowl, mix the flour with the baking soda, baking powder and salt. We will mix 2 of the yogurt cups with vanilla essence and the juice obtained from an orange. Rub the eggs with sugar and oil, pour them over the yogurt and add the flour, stirring.

We put the obtained mixture in a tray and put them in the oven for 50 minutes. Prepare the gelatin following the instructions written on the sachet. Mix the remaining 3 cups of yogurt with the juice from the second orange and add gelatin.

After the time has expired, remove the countertop from the oven and let it cool. Cut wide into two smaller countertops. On the first top we will put a layer of yogurt, then we place the second top on top and add another layer of yogurt.

The cake is left in the fridge for 4-5 hours or overnight, and the next day it can be cut and served.

I always make this cake when I'm in a time crunch, because it's easy to make. The recipe is for the cake with yogurt and whipped cream slightly modified.

We need :
For the cream:

  • 2 yogurts of 200 g (I used yogurt with green walnut jam)
  • 400 ml fresh
  • 10 gr gelatin
  • 1 sachet of whipping cream
  • 4 eggs
  • 3 tablespoons flour
  • 4 tablespoons sugar
  • 1 tablespoon cocoa tip
  • 1 knife tip baking powder

For the top, mix the egg whites with hard foam, then gradually add the sugar and mix well until it melts. Gradually add the yolks and mix well after each one. We also add flour mixed with cocoa and baking powder. Use a wooden palette and mix lightly over your head so that the composition retains its volume. Bake for 15 minutes on a suitable heat (170g C).

Let the countertop cool and then take it out on a plate.

The cream is prepared as follows. Mix the yogurt with 2 tablespoons of sugar and let the sugar melt for a few minutes. Meanwhile, heat a little water, separately dissolve the gelatin in cold water and then mix it with hot water without boiling it. Pour the mixture into the yogurt and then mix with the whipped cream together with the hardener.

Make a syrup from 150ml of water and 4 tablespoons of sugar and add a little rum essence (a teaspoon). Syrup the top and then put the cream on top.

With a knife draw the slices of cake and then keep cold for at least an hour.

Servim. It is a refreshing cake and not very sweet :).

How do we prepare the fruit for the pie?

First of all, we must keep in mind that the fruits in the compote are wetter than the fresh and frozen ones. We will have to let them drain for at least 30 minutes in a sieve. Then, if necessary, we can cut them into smaller pieces.

I used pineapple and tangerine compote to which I added raisins and dehydrated cranberries.

How do we prepare the cream for this yogurt cake?

This time I made homemade yogurt. If you don't know how to make yogurt at home, you can use our simple or fruit yogurt recipe (the recipe here). You can also choose a creamy Greek yogurt with 10% fat (commercially available) or a mix of yogurt and thick sour cream.

Heat the oven to 170 C with ventilation (medium stage for gas). Separate the eggs. Beat the egg whites well with a pinch of salt. When the foam is hard, add 120 g of sugar and continue beating until you get a thick and shiny foam (if you turn the bowl over your head, the foam will not run into your head).

Beat the yolks separately with 120 g of sugar and vanilla. After a thick foam is formed, add the starch (mix at low speed) and finally the yogurt or fruit yogurt.

Beat the beaten egg whites carefully with a spatula. Gradually put the egg whites in the yogurt cream, not the other way around. We try not to crush the foam so as not to lose the air accumulated in it.
