These simple egg, milk, flour, sugar and spice muffins are given the the delicate glitz of Paris when the tops are dipped in a shimmery cinnamon, sugar and melted butter glaze. Like a sprinkling of stardust, this topping gives these sweet, dainty muffins the taste and sparkle of 'ooh la la'. Magnifique!

  • 190g plain flour
  • 100g caster sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 egg, lightly beaten
  • 120ml milk
  • 75g butter, melted
  • 4 tablespoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 75g butter, melted

  1. Preheat oven to 180 C / Gas 4. Grease muffin tin, or line with muffin cases.
  2. In a medium mixing bowl stir together flour, 100g sugar, baking powder, nutmeg and salt. Make a well in the centre of the mixture. Stir together egg, milk and 75g melted butter. Add egg mixture to flour mixture; stir until just moistened (mixture may be lumpy). Spoon mixture into prepared muffin tin.
  3. Bake in preheated oven for 20 to 25 minutes. Meanwhile, combine 4 tablespoons sugar and cinnamon. When muffins are finished baking, dip tops of muffins in the other 75g melted butter, then in the cinnamon sugar mixture. Serve warm.

First batch had a chemical after taste, but consistency was good. So I reduced baking powder to 1/2 tsp and 2nd batch were very really nice! Put a tsp of nutella in the middle for an extra surprise!-28 Feb 2015

Very simple and quick to make, light and tasty. My young boys think it's a bit like a pancake in a cupcake. I can recommend it for something a bit different.-09 Apr 2014

These muffins are awesome! They are a huge hit with the family every time I make them. They work especially well as mini-muffins.-------Update: I now use this recipe as a base for other muffins, like replace the nutmeg with vanilla and add 1 cup of blueberries. How to make it

  • Combine first 5 ingredients.
  • Add milk, egg and 1/3 cup of melted butter.
  • Mix thoroughly.
  • Grease and flour muffin tins.
  • Fill 1/2 full and bake at 400 degrees for 20 minutes or lightly browned.
  • Remove from pan immediately.
  • Dip in remaining 1/3 cup melted butter.
  • Roll in mixture of the sugar, cinnamon and vanilla.
  • Serve warm.

French Butter Croissants

Wow family and friends at brunch with a basket of home-baked, buttery, flaky French croissants. Creating the famous French breakfast pastry is a fun challenge for home bakers who can afford to plan two days ahead. Most of the time is needed for resting the dough, between short intervals of hands-on work. Your patience will be rewarded with a dozen large, freshly-baked croissants just like those from the corner bakery.


HOW TO MAKE FRENCH TOAST MUFFINS

  1. Prepare bread. Slice and cube up your 2-day-old bread and place into a large bowl.
  2. Make French Toast Batter. Mix eggs, cream, milk, sugar, syrup, vanilla extract, orange extract and cinnamon together in a bowl.
  3. Fold in bread and peaches. Mix peaches into batter then gently fold bread into mixture with your hands, just until bread is evenly coated.
  4. Chill. Cover and refrigerate for 2 hours up to overnight.
  5. Assemble. Evenly divide bread/peach mixture between greased muffin tins, pushing mixture down into the tins as needed. Set aside.
  6. Make streusel. Combining sugar, flour, cinnamon, and butter, in a medium bowl. Cut in the butter with pastry cutter, 2 forks, OR (my favorite method) place mixture in food processor and pulse until the mixture is crumbly. Spoon topping evenly over muffins.topping spoon over cubed bread in tins.
  7. Bake. Bake muffins for 25-30 minutes until tops are golden.
  8. Serve. Serve with syrup, cream and garnish with additional peaches.
