Turkey, Bacon and Kale Roll-Ups
These substantial party snacks — filled with lean turkey, crisp bacon and lightly dressed kale — use hummus instead of cream cheese for a healthy-ish twist on the greatest make-ahead appetizers we know of: tortilla roll-ups.MORE+LESS-
cups shredded kale leaves, thick inner ribs removed
teaspoon crushed red pepper flakes
container (8 oz) hummus
large spinach flour tortillas (10 inch)
oz thinly sliced smoked deli turkey
jar (6 oz) Progresso™ marinated artichoke hearts, drained, chopped, patted dry
cup jarred roasted red bell pepper strips, patted dry
oz fresh mozzarella pearls, patted dry
In medium bowl, mix kale, olive oil, pepper flakes and salt; massage lightly to soften leaves. Let stand while assembling roll-ups.
Spread one-fourth of the hummus over each tortilla, spreading evenly, leaving 1/2-inch border. Divide turkey evenly among tortillas. Top half of each tortilla with artichoke hearts and pepper strips. Top with mozzarella, then kale mixture. Place 2 slices bacon down center of mixture on each.
Starting from side with toppings, roll up very tightly. Wrap with plastic wrap. Refrigerate at least 2 hours but no longer than 24 hours.
To serve, cut 1 inch from end of each roll, and discard. Cut each roll into 8 (1-inch) slices.
- Massaging kale helps break down tough leaves so it can be enjoyed raw while maintaining its brilliant green color.
- Want to amp up the flavor even more? Use your favorite flavored hummus instead of plain.
