cup frozen whipped cream, thawed

Gingersnap cookies, apples, or cinnamon graham cracker sticks

    In a large bowl, beat cream cheese and powdered sugar until smooth.

    Add in pumpkin, sour cream, cinnamon, pumpkin pie spice, and ginger. Mix well.

I seriously made probably thirty pumpkin recipes last fall and by the time Thanksgiving was over I never wanted to see pumpkin again. Ever. Well time does really heal all things, so now I am back to all things pumpkin. Although this year I did promise myself I wouldn't make anything pumpkin until after October 1st so I didn't burn myself out. Moderation's never been my thing. The name "The Girl Who Ate Everything" isn't earned from exuding self control.
  • If you like pumpkin pie, you will love this Pumpkin Pie Dip. Last year, in my pumpkin madness, I made a couple of pumpkin dips but this one by far exceeds those. It has a creamy texture and just enough spices so that they aren't overpowering. It was so good that my husband was following me around the house trying to steal a bite as I was trying to snap a picture of it. When eaten with cinnamon graham crackers, it tastes just like pumpkin pie!If you really want to go the extra mile, hollow out a pumpkin to serve the dip in. Otherwise just use a cute Halloween bowl and serve with green apples, cinnamon graham crackers or gingersnaps.
