Staring off into a turquoise ocean makes all of life’s troubles melt away; taking a bite of these tropical, pineapple and mango rum-glazed pancakes will hopefully have the same effect.
Ingredients
For the Pineapple and Mango Pancakes
- 1 1/2 Cup all-purpose flour
- 3 1/2 Teaspoons baking powder
- 1 Teaspoon salt
- 1 Tablespoon white sugar
- 1 1/4 Cup milk
- 1 Egg
- 3 Tablespoons butter, melted
- 3 Ounces pineapple, diced
- 3 Ounces mango, diced
- 3 Ounces blueberries
- 1 Strawberry, sliced
- 1 Tablespoon sour cream
- 1 Ounce rum, such as Bambarra Rum Reserve
- 2 Ounces maple syrup
- Fresh mint
